99% of all of thse problems have to do with a bad ground. Clean all the connections, both at the battery or at the car. Alternatively, something is shorting and drawing power when it shouldn't. But, as the axiom goes - it's the ground.
Connect a slave battery to the alternator live terminal and an earth. Then the central locking should work.

Some Models require a "quiescent current retention unit" to be connected prior to removing the battery cables.
Did you by any chance make a spark removing that battery? If you did or didnt I suggest you check the fuse
