You could have blown a head gasket, but probably not. You probably cracked your injector sleeves. You need to have the cooling system pressure tested with the injectors out. You'll also need to find mechanic with the special tap for the sleeves if they're bad. Try not go to Ford; they charge a ton to fix them. The parts are not expensive, just the labor. Be sure the mechanic knows about proper care of the coolant system afterward since the diesel fuel quickly contaminates the coolant.
There are numerous possibilities. You really need to have the cooling system pressurized to determine what is leaking.
I was looking at the 2004 Ford F-350 diesel supplement and it shows that the engine cooling system capacity is 27.5 U.S. quarts ( that includes the heater and the 5 quarts in the reservoir ) It came from the factory with a 50 / 50 mix of distilled water and antifreeze So for a 50 / 50 mix you would need approximately ( 3.5 gallons of antifreeze )

I was looking at the Ford F-250 7.3L DIESEL supplement and it shows : The engine cooling system capacity is 32.75 U.S. quarts ( includes the heater and the recovery reservoir ) * So , for a 50 / 50 mix of distilled water and the correct type of antifreeze it would take almost ( 16.38 quarts of antifreeze mixed with an equal amount of distilled water )
Most likely you have a slow antifreeze leak in your heater core which is being sucked onto the windshield.. You may also smell an antifreeze odor.
The Owner Guide shows Ford specification ESE-M97B44-A ( that would be the green color universal antifreeze )

Any brand of antifreeze can be used in a 2001 Ford Taurus such as Prestone. The antifreeze can be 50 50 antifreeze.
