Over their chest plate they wore a hood that they could flip over their heads that was made of chain-mail. They also wore chain mail sleeves and a shirt under there chest-plate along with chain-mail leggings under their leggings. Also I don't know if you also wanted this but guessing that you are talking about knights on foot they normally carried 2 swords depending on what they were fighting. One sword was a sharp broadsword for slicing and the other was a more dull weapon used for having force that could easily crack someones ribs. They also carried a shield and a small very sharp dagger. If they were of high enough rank they would also carry a crossbow.
