An open thermostat would keep the engine from heating up to normal operating temperature. The sensors effected can only report what they sense. The "check engine" light may throw a code like "P0116" (engine coolant temperature circuit range/performance problem).
When the thermostat and radiator were replaced, coolant could have dripped into an electrical connector or a sensor could be disconnected or damaged. Check the temperature sensor and crankshaft sensors first.

ask your service station to do a compression test. I had the same problem and replaced all sensors and thermostat but after the test it was found out that there was a crack in the housing holding the thermostat
