Cams are mechanical devices that typically have an irregular-shaped surface, such as a lobe or a projection, that rotates to impart motion or exert pressure on another part of a machine. Cams can come in various shapes and sizes depending on their specific function in a mechanism.
It uses a timing chain which drives the cams.

A simple machine.
There were several different sets of cams made for various kenmore machines. You can check at sears.com under parts direct to see if the parts charts for your machine is available and if it shows the cams. please note that these are line drawings and aren't always the clearest. There are two groups on yahoogroups for older kenmores and if I remember correctly, the one called Kenmore sew did a survey of the different cam sets and what machines they went with. you could join them and check the archives about it. The last thing I can suggest is do a search on ebay for your model machine and see if one that has it's cams is listed. This could take a while but if one is shown then you would know what to look for.
Different things in a machine can rotate. In a motor, the rotor will rotate or revolve. We also find shafts, gears, pulleys, cams, flywheels and a number of other parts that spin.
Yes, it is possible to find instructions for the fancy stitching cams for a 1974 Borletti sewing machine, though it may require some effort. You can check online resources such as sewing machine forums, vintage sewing machine groups, or websites that specialize in sewing machine manuals. Additionally, contacting Borletti directly or looking for user manuals on auction sites or vintage sewing machine retailers might yield results. Ensure you have the model number handy for more accurate assistance.
This question is rather vague. In the 1960's Singer came out with a Touch and Sew sewing machine that had a set of plastic cams. They were disks that fit into a spool at the top of the machine. Each disc made the machine perform stitches differently.
