The A/C works by spraying a high pressure liquid refrigerant through a small orifice. As the spray enter the evaporator it vaporizes and gets cold. When you shut off the system, whatever high pressure liquid is in the line between the condenser and the orifice continues to spray until the pressure inside the evaporator equals the pressure in the condenser.
