There are really two answers. In the case of a bathroom vanity, the standard height has traditionally been 32 inches from finished floor to counter top surface. As we have become taller overall, this has often been increased to 34 inches, as many people find 32 feels too low. In kitchens, the standard remains 36 inches above the floor.
Because floors are almost never level, it's common for installers to find the midpoint between the floor's high and low spots in the run of cabinets, and make that point 36 inches. this keeps the extremes from varying too far from the norm.

Once you add that and a sheet of plywood which is 3/8" to the 97 1/8" you get 104 3/4". The standard height of a wall in a residential house is 104 3/4"
