Yeast respiration occurs as a way for yeast cells to generate energy for survival. Through respiration, yeast cells break down sugars to produce ATP, which is used as an energy source for cellular processes. Oxygen is typically needed for efficient respiration to occur, but yeast can also undergo fermentation in anaerobic conditions to generate energy.
Incubating yeast before using it in a recipe allows it to become activated and begin fermenting, which is necessary for leavening the dough or achieving the desired flavors in the final product. The incubation process helps to ensure that the yeast is alive and healthy, leading to better fermentation and rising of the dough.

Yeast will produce gas if sugar, water, and warmth are available as long as the yeast is still alive. If it is too old or has been too hot and the yeast has died it won't create the gas.
