The same way that air influences the shape of a balloon. When the cell is in the proper environment water enters the cell and it is the proper shape. When the solute concentration outside the cell is too high the water leaves the cell and it shrivels.

In isotonic solution, the concentration of water molecules outside the cells is same as the concentration of water inside the cells. Which means concentration of sugar molecules outside the cells is also same as the concentration of sugar molecules inside the cells. Therefore, there is no net movement of water molecules between the cells and the isotonic solution outside the cells. The shape of cells remain unchanged. No osmosis occurred.

Hypotonic solution has higher concentration of water molecules than the cells while hypertonic solution has lower concentration of water molecules than the cells.

The water molecules move from high concentration regoin to lower concentration region.

If water molecules move out of the cells the cells will shrink.

If water molecules enter of the cells the cells will expand and eventually burst.
