Ovaries produce and release two groups of sex hormones-progesterone and estrogen. There are actually three major estrogens, known as estradiol, estrone and estriol. These substances work together to promote the healthy development of female sex characteristics during puberty and to ensure fertility.

∙ 10y agoThey create Oestrogen and progesterone during a menstrual cycle, for puberty or oocyte (egg) development during pregnancy. Don't be mistaken that they constantly produce though. The progesterone and oestrogen are only produced for two weeks every menstrual cycle. When an oocyte is fertilized, after the two weeks follicles within the egg will then produce these hormones.

It could be possible that your brain sensed a drop in hormones since the removal of the ovary, and your other ovary is now working overtime to restabilize your hormones, resulting in an excess of hormones in the body, causing your breast to grow larger.
ovary
The ovaries have two functions: they produce eggs (also called ova) and female hormones. The size of each ovary is about 1.5 inches long. Each month, during the menstrual cycle, an egg is released from one ovary. The egg travels from the ovary through a fallopian tube to the uterus. The ovaries are the main source of female hormones (estrogen and progesterone). These hormones control the development of female body characteristics, such as the breasts, body shape, and body hair. The ovaries also regulate the menstrual cycle and pregnancy.
