As per your question, same organism ( i mean an animal or plant, or eukaryote not as prokaryotes like bacteria) All the cells were originated from the mother cell called Stem cell- Totipotent cells, From this Totipotent- various subdivision cells arise based on the function and the role of the specific organs they are termed as pluripotent, multipotent and unipotent. So based on the function and the role of its activity it needs a specific structure for its efficient activity, like Nerve cell which needs synapsis, Skin cells which needs respiration through external, kidney cells which helps in filtration etc, so the function of a cell decides its structure and shape of a cell.
