Oryza sativa is the scientific name for Asian rice species most commonly used in the U.S.

There are many natural varieties of rice based on the natural environment in which they evolved or adapted. The grains come in different sizes, flavors, color, aroma and txture (stickiness). Additionally with scientific cross breeding and genetic modification, there are even more varieties with there own scientific or cultivar names.
