It could be vitamin k, but I am not positive. Saturated fat is probably a least needed nutrient. Actually, I am wondering the same thing. I am taking a Health test right this minute as I am typing, I am not cheating, I am homeschooled and I just can't find out what nutrient it is. False. Digestion (at least starch digestion) begins in your mouth. Saliva helps begin the break-down process as you chew. Chewing is also a means of the start of the breakdown process of food going into your GI tract.
While fiber may increase stool volume and slow the rate of digestion (at least insoluble fiber), the actual process of digestion would be unaffected by fiber, as compared to the effects of amylase and pepsin in the GI tract.
