If the weathering process did not exist landscapes would stay the same the rock process would not occur either and important mineral resources would soon seen to be scarce and run out. This process has to happen otherwise there would be no vital resources for the earth to erode.
If Earth had had no erosion or weathering, it would look like a huge ball of rocks and space dust . Water would form on the surface of this world as the huge heat in the center of Earth evaporated and sublimated water from underground, allowing it to gather at the surface as discrete water.
For that to happen, the interior of the Earth would have had to cool and weather would have ceased to exist. Not a pretty picture. Look at the moon as an example.
We could all die because there's no rock cycle so certain minerals that we need would become scarce and eventually run out.
