I spoke to customer service at a major distributor of ready made frosting. They told me it is a "quality issue" not a "safety issue" that you not eat outdated frosting. In my case, I'm only baking something fun for myself, so I determined that so long as it tastes okay - which it does - then I'll go ahead and eat it. The Customer Service Rep assured me there is nothing in it to make me sick as a result of the expired date, they are concerned with it not being as high quality expired as it is when fresh. The way I look at it, there's enough stuff in it to make me sick even when it's fresh, but I like the taste so I'm treating myself! I intentionally am not stating the name of the major distributor because if someone else happens to have a bad experience with outdated frosting, I don't want the manufacturer held responsible. It is all on you - whoever choses to eat it expired. And I do so....enjoy!
