There are many possibilities.
If your canary is experiencing a moulting season, he or she is likely to be irritated. Moulting feathers is not like a cat losing hair in hot weather, it can actually be rather annoying for a bird, especially smaller ones like canaries.
Sometimes canaries peck if their cage is too small. Your canary is "punishing" you for giving him or her a home that is too small to stretch his/her wings, because s/he is stressed. Make sure you have the correct size cage for the exact species of your canary.
Hormones may also be a factor, especially if your canary is female. Female canaries are much more aggressive than male canaries. They have to be, because they need to protect their nest from predators (and humans are predators to birds). If it is mating season, then hormones may play a part in the reason why you are being pecked.
Your canary might be territorial. It might not like you intruding in his or her personal space. Even though the canary is trained, that doesn't mean she or he wants to be bothered all the time. She or he also wants some time to him/herself.
Sometimes illness is a reason for pecking. The canary might be trying to protect itself because it is already stressed enough. If you notice other symptoms such as lack of appetite, diarrhoea, lethargy, fits or falling off perches, please see a vet.
It's entirely possible that your canary isn't pecking you at all. You might be mistaking something else for pecking. For example, your canary might be showing you affection.
When two birds get along really well, they "nudge" each other with their beaks or preen each other's feathers. Since humans don't have feathers, it looks like the canary is pecking you, when it may in fact trying to find something on you to preen, to say "hey, I love you".
