Springtime would be my guess-when they are in "heat" or have young ones.

I agree only because they are breeding. However if you are hunting wild turkey, or if they are in your yard eating up your garden, if your state gives out prediter permits, then try not to kill the only tom you see. He may be the one that will give the hens offspring.

Like any wild meat, make sure you cook it well.
