Yes of course! Cats are strict carnivores and predators, and will eat everything of their prey. The heart, as well as organs of the prey, are full of essential fatty acids (Taurine, for example) and other nutrients that a cat needs. Even bones provide the cat with calcium and are easily broken down and digested in the cat's stomach.
The the cat would get the virus this happens all the time e.g. if a worm had a virus a mole might eat it but then a fox might eat the mole, eventually the fox will have the virus

Yes. An owl would easily eat a kitten or small breed of cat.

Flies will lay eggs on the corpse, which hatch into maggots. The maggots will eat the flesh of the bird, leaving just the skeleton and feathers behind. It's also likely that a predatory animal - such as a cat or fox - would eat it.

This depends on the situation. If the bird is already dead, you can either let the cat eat the bird, or take the bird away from the cat. Cats, even our pet cats, are perfectly capable of safely eating a bird as that is what they have evolved to eat, amongst other small animals. Such small animals are easy to hunt and catch, and due to the size of the prey, even the bones (a source of calcium) are easy to crunch up. If the bird is alive, you can try and coax the cat to let go without causing more damage to the bird. It is advisable to then take the bird to the nearest animal sanctuary or hospital who can then treat the bird, depending on its injuries.
