In geology and civil engineering sand and gravel have specific meanings! Sand is material that varies in diameter from 1⁄16 mm upto 2 mm. Any material larger than this is either gravel (>2 to 4 mm), a pebble (>4 to 64 mm), a cobble (>64 to 256), or a boulder (>256 mm).

As the difference between gravel and sand is the size of the grains then a sieve with a mesh equal to the maximum diameter of sand could be used to sieve the material. All the material passing through the sieve would be sand (or smaller material) and anything trapped on the sieve would be gravel or larger material.
