They aren't. You can heat up any chemical or element and get a gas under the correct circumstances, whether it's a gas at room temperature or not. You could have iron gas or solid metal hydrogen.
the Helium atoms in this model are different from real helium models, because the picture shows what the atoms look like at a much larger scale than they actually are, and there are probably billions of them so they would not be in a erratic motion instead they would be calm in there motions.
