The pH tells the Acidity (or Hydrogen Ion Concentration) of the solution.

The range of this measure is from 0 to 14, with Neutral being pH7.

The lower the pH, the most Acidic end and, a pH above pH7 is Caustic.

For gases, you can simply make the pH paper wet with some pH neutral paper, if the gas dissolves in water. For solids, you can make a solution out of it and then test the pH.

You can use pH papers, pH indicators, spectrophotometry, etc.

But the most common and accurate method is the measurement with a pH-meter.
