Chemical. When a solute, let's say salt, dissolves in water the Chlorine and Sodium atoms in the salt molecules dissociate. They then wander around in the water as negative and positive ions respectively. Even thought the salt is now part of a liquid solution, it's still in solid form because it doesn't contain enough heat to act freely like a liquid. This is evidenced when saltwater is boiled and all the water vaporizes, but salt crystals form at the bottom of the container.
