What makes vinegar sour is the acetic acid present in it. This acid is due to the oxidation of alcohol to a carboxylic acid. Acetic acid is CH3COOH so the elements carbon, hydrogen and oxygen make up vinegar.

Though this is the main thing that's responsible for the bitter tastes, there are many types of vinegar that are available and they can be created from different types of alcohol e.g. cider, wine, types of rice, fruit etc... so the compounds that are naturally in the ingredients will also be constituent parts of the vinegar, and you cant forget that its all a solution in water.
