One interesting use is to define a temperature standard - the triple point of water (or any substance, for that matter) is at a very precise temperature. On the other hand, the melting point or the boiling point depends on pressure.

Triple point describes the only set of conditions at which all three phases(solid, liquid, gas) can exist in equilibrium with one another. Also the degree of Freedom is 0 at this point which means that the system is invariant at this point. The significance of this point is this that Triple Point of a system can exist at specific values of Temperature,Pressure and Composition only.

In thermodynamics, the triple point is the single, unique temperature and pressure at which all three standard phases (solid, liquid, and vapor) can coexist in equilibrium. The most common is that of water, whose temperature is defined to be exactly 273.16 K, which helps define the Kelvin temperature scale.

What happens when the pressure or temperature of the triple point of a phase is being altered?

You can't alter it. A triple point is ONE set of pressure (p) end temperature (T), a physical property for each pure compound or element in all three phases together (s, l, g).
