Usually, the water will sink under the oil until it heats up enough to turn to steam. It will then come to the surface as a bubble and pop, splattering the hot oil. This can be very dangerous if there if it involves a large amount of oil and water.

You are listening to the water rapidly evaporating and exploding there is a huge difference in the boiling point of water and that of oil. sp as soon as hot oil surrounds the water it turns into water vapor as it does it pushes the oil out of the way to escape this gives a sputtering noise.

The water will violently turn to steam before reaching the pan. Basicly, you're going to get a explosion of burning steam and grease while the fire continues undettered
