An unsaturated solution is one that has less than the maximum amount of solute dissolved into the solvent at standard temperature and pressure (STP).

A saturated solution has the maximum amount of solute dissolved at STP.

A supersaturated solution has more than the maximum amount of solute

dissolved (made possible typically by heating the mixture beyond STP, to allow for more solute to be dissolved). When the solution is recooled, a seed crystal can be used to grow larger crystals (such as in the case of rock candy).
