or
Sucrose + Water ==> Glucose + Fructose
Industrially Speaking: A catalyst called invertase is used during this reaction. Yeast is also added to the Sucrose (I don't know when).

∙ 12y agoMost probaly it is a two-fold oxydation of (eg.) glucose.
Reductant: C6H12O6 --> C6H8O6 + 4H+ + 4e-
Oxidant: 4H+ + 4e- + O2 --> 2H2O
(but other 'oxidants' than oxygen might be more suitable, however can't think of any proper example)
