A way that helps to think about it is a chemical property is anything that would change the chemical makeup should it occur (combustion would. putting a chemical in water would, changing the pH would). Melting and boiling point don't change the chemical makeup (freezing, melting, or boiling mercury doesn't change the fact that it is mercury) but combustion changes the element into something else and produces other elements or observable reactions (if you combusted mercury, it wouldn't be mercury anymore!).
