Plastic is very suitable for goggles, because it can be made in a form that is both transparent (so you can see through the goggles) and relatively flexible (so that if something does hit them, the goggles won't break into pieces that could get in your eyes, which would then defeat the whole reason for wearing goggles in the first place) while being strong enough to offer real protection to the eyes.
Nunchucks can certainly be made completely our of plastic. The plastic must be a very hard plastic, though. They can be made from wood, metal, or plastic.
