Some atoms gain or lose electrons to form ions because they like to maintain

electro-stability .

For example, certain atoms such as oxygen will gain electrons to become more stable so they do not react as bad as when their electron shell is not full .

Let's take as an example common table salt (NaCl).

When it is in its' solid form it forms a stable compound that we sprinkle on our food (not too much I hope). But when we add it to water the water pulls the two atoms apart. The Na (sodium) loses on electron in its' outer valence shell (kinda like the orbit of the moon) and the Cl (clorine) atom gains this electron and puts it into its' outer shell. The reason they do this is because atoms like to maintain electro-stability.

An ion is a charged species but atoms are not, therefore they have to gain or lose electrons to become an ion. It has to be energetically favorable for them to do this. As an example, Fluorine would much rather be F- than F as F- is isoelectronic with Neon. In other words has a stable octet of electrons.
