organic material burns as it is carbon based. non-organis materials ccontain carbon, but because of the inter molecular structure between each compound is bonded differently it doesn't burn aswell.

Secondly, it can be due to incomplete combustion due to limited amounts of Oxygen. Pure Carbon may be produced in the form of soot and ash.
