Because Aluminium is amphoteric and reacts with a strong base and with a strong alkali. NaOH is that strong alkali. Once the soda gets through the AlO layer on the aluminium the soda will react violently giving off toxic gas in some cases or Hydrogen gas if initially mixed with water.

The rest of the machine should be cleaned using a damp rag (electrical components should never be placed in water). Machines using salt and ice can simply be cleaned in hot soapy water, rinsed and dried. If all you have is a bowl that is prefrozen in the freezer clean it the same as a machine using salt and ice.
