The giant's name is never mentioned in Jack and the Beanstalk.

In "Jack the Giant Killer" the giant's name is Blunderbore. Alson in "The Thief and the Beanstalk" mentioned the the wife of the giant was named Gullinda. Though one story may have inspired the other, in truth they are entirely separate stories and they should not be confused as the same story.

The characters in Fairy Tales generally do not have surnames. They are supposed to be "the average person" and represent everyone. "Jack" is a nickname for the name John, and is one of the most common men's names, so the male character in a fairy tale was often called "Jack."
