Akito actually has two meanings.

Aki-to : Crystal person (Akito is too emotional & can be broken as easily as crystal can be).

A-ki-to : Person who resents (Being Akito she is also bitter and, although I hate to admit it, resentfull)

Akito means "Autumn Person" Sohma does not actually mean anything particularly, however I believe when you said "Akito Sohma" you meant the character from "Fruits Basket" and as you should already know many of the Sohmas are possessed by animals of the zodiac. And Soma means The whole axial portion of an animal, including the head, neck, trunk, and tail. Which I think the author, Natsuki Takaya , might have purposely added "Sohma" as the last name because of the relation.
