Why did they stop the series Fruits Basket?

The original (Japanese) manga finished because the story ended. I have no idea where the licensed english releases are right now, but it will sooner or later catch up and end as well. The anime ended because it followed a sort of different story-line as compared to the original manga source, though it could also be said that the anime ending was "open" since it really didn't feel "conclusive" and not all members of the zodiac appeared.

Well, you see, the anime is ok at the start. As you keep watching (if you've read the manga) you start to see the different place, things that do/don't happen in the manga/anime are/aren't in the anime/manga. So in the end the manga company sued the company that created the anime.

The original Fruits Basket anime adaptation released in 2001 only covered a portion of the manga series. The decision to end the original series was likely due to production constraints or the desire to focus on other projects at the time. The series was rebooted in 2019 to cover the entire manga storyline.

Because the manga was ending and the anime didn't want to let the manga's actual ending show. That's what they do to make you read the manga.
