To drain the oil on a 1991 Chevy S10 Blazer, located the oil pan drain plug. Use a wrench to remove the plug and the oil will flow into the receptacle you have provided.
5W-30 works best in most climates.
It's best to raise the truck body about 4 inches or so off the frame and use wood to keep it there until the new tranny is bolted into place. Alternatively, you can hammer the floor out of shape to provide the clearance needed.

They don't use an outside gasket. It has a rubber ring around the stat that makes the seal.
