There's a wide variety of types used depending on the temperature and climate you're in, the severity of work it's being used for, amount of miles or hours you use it at a time etc. There isn't "one kind fits all" to this question.

15W-30 or 15W-40 diesel oil is generally used as an all-around engine oil. Specific oil for diesel engines must be used. Any 2009 or newer engine (in the US) must use API-CJ4 low ash diesel oil.
Rotella 10W40 is probably the most popular. DELO probably has the best base oil but the additive package isn't as good as some. DELO is an acronym for diesel engine lubricating oil and was the first oil designed specifically for diesel engines. My personal favorite is Mobil Delvac.
It is a 75w90 synthetic gear oil.

Any API CJ4 diesel oil will do for the engine of a semi truck from any model year. 15W-40 is typically used by default.
It can vary depending on the size and model of the semi truck, but typically a semi truck oil change requires around 10-15 gallons of oil.

Amsoil synthetic oil seems to be your best bet for oil for your diesel truck. It helps to prevent oil from becoming foamy and it works in even very hot environments.
