Letters are stored in an encoded form, using one of several standard codes. The traditional ASCII codes, for example, assign each letter a unique number in the 0..255 range, which allows storing the code for one letter in one byte. Other symbols, such as digits and punctuation marks, also have a unique code assigned to them.

More modern coding schemes, for example the unicode codes, use multiple bytes for encoding. This allows for more different letters (and other symbols) to be encoded, thus allows to correctly handle a much larger group of languages.
