if one of them has either '24' or '0' at the top and '6', '12', and '18' around it, or maybe '8' and '16', that's a 24-hour hour dial. You know, "military time." If it's 6 PM, this dial tells you that it's "1800" (assuming you set the watch correctly).

-dials that count up to 60 are likely seconds or minutes dials for a chronograph (stopwatch) function. This would usually go with a couple of extra buttons on the side of the watch, next to the crown.
