CAD/CAM is very very accurate.
With CAD you can save your work. though Making stuff by hand is lengthy and extremely tiring. You have to keep measuring and work slowly to get perfect results. Nobody is perfect and will never get it exactly right at the speed of a machine not needing to measure, that can make perfect sides. Also they work 24/7.
