Multiple processor systems allow you to run multiple programs at the same time. Generally this means a system-wide boost in performance (when compared to a single CPU machine).

This is especially true when you have one program that takes a lot of CPU time and would normally bog down your whole system. On a dual core machine, you have a whole other processor free to run your other, less intense, programs.
