It depends on the substance. The gram is a unit of mass and millilitre is a unit of volume. One g of water, depending on the temperature is either exactly 1 ml or very close to it. Mercury is denser, so 1 g would be less than 1 ml; air is less dense, so 1 g would be more than 1 ml.
