If you are talking about the date data was entered, unless you have specifically put dates in, then the only way to know is from when the file was last saved. If data has been put in over a long period on different dates then there is no way of telling unless you date them specifically. You could do that with comments in each cell or beside cells.

If you are taking about recovering data, once a file is saved, what was there is overwritten. You cannot undo it. You need to make copies of the file. If data has just been entered over other data, then you can hit undo or press Ctrl - Z to undo it.
