depending on the kind of spice , you should only keep them from 6 months to 2 years, if the smell and color have faded, Get rid of it . Freezing them makes them last even longer,.I just found a can of Dill seed from 1977, i had to argue with my grandpa to throw it out....Don't worry , i never used the stuff
