The colors are there just to help you get the connections wired to the other connectors correctly. As long as the connectors are correctly connected, the cables can be any color.
The colors of the RGB cable stands for several things. If your cable has one red, one white, and one yellow colored connector it is called a composite cable. The yellow connector is the video, while the white and red are the left and right audio cables.

EIDE cable uses a 40-pin connector at the end of the cable to interface with the drive.
To put connectors on the ends of a cable, start by stripping the insulation from the cable ends to expose the wires, typically about half an inch. Then, arrange the individual wires according to the connector's wiring scheme, usually matching colors or pinouts. Insert the wires into the connector and secure them by either crimping them with a specialized tool or screwing them in place, depending on the type of connector. Finally, ensure a snug fit and test the connection for continuity.
Hood release cable has connector nuts on both ends of the cable. Loosen the connector nuts. Remove the cable retainers. The cable will come off and can be replaced with a new hood release cable.
