Not really possible to give a definitive yes or no answer - as different industries use different working times. For example - open office hours wouldn't work in the emergency services - you couldn't just turn up when you felt like it. Same goes for the security and medical industries. Basically you can't ! Open Office doesn't save previous version of documents. It simply over-writes the existing document with each new version that's saved. If you deleted a load of work then saved the document, your previous work is lost.
