First select gradient then look at Options bar which is below menus. Click on rectangle with gradient which is in Options bar (first option) to open Gradient Editor dialog then select different gradient if you want. Click on image and drag. To remove banding in Photoshop, you can try using the Noise filter or the Gradient tool to add noise or a subtle gradient to the image. This can help smooth out the banding effect.
