Files and folders are normally kept in filing cabinets. They are usually organized in some form of either alphabetical or numerical order depending upon what you have in the files. Some people put important files in the front and less important files in the back. It's up to you.

To see both folders and files intermeshed by date, you can use this trick: Open the folder you wish to sort. In the Search box at upper right, type *.* and then start the search. Note: *.* tells search to "get all items in the folder" The search results window will display everything in date order, regardless of whether it's a file or a folder.

Filing cabinets contain file folders, and file folders contain various types of papers. By placing papers in file folders and then placing the file folders in filing cabinets, it becomes much easier both to store the papers and to locate them when you need them (as long as your files are in order).
I do it by File Expert, an file management app. Enter the app-Folders tab-SD card-Select Order button-Choose By Last Modified Descending Order. You can view files by name, type,last modified,size(all by descending order).
What are you referring to by "rearrange?" Files are displayed in alphabetical order; to "rearrange" them, you would simply change their name.

If I read this right 'itunes' is a high level folder containing three folders,one of which contains 16Gb of music. The purpose 'itunes' serves is to keep the three folders together. Without it the other three folders will be listed in alphabetical order in the next highest folder. Think of 'Itunes' as a sock drawer. Open the drawer and you have socks. Now empty all the drawers in the house into a big box. Give it a shake, now pick out your favourite socks. If it were me, as 'itunes' is keeping the music and associated files together, and taking up no real disc space, I would either leave it alone, or lose it and make the data and library folders sub-folders of the 'itunes music' folder. Don't worry about associating/re-assigning the folders to applications, Windows registry should sort that out (assuming a Windows OS in use).
