Without knowing the exact scanner model it is impossible to give exact instructions but Epson scanners are generally well supported by Mac OS X and should be recognised when connected. Plug scanner into computer. Turn on scanner. Launch Image Capture (in the Applications folder) and it should find the scanner and offer preview - set up - scan options. In other software, such as Photoshop, the scanner will probably be recognised as a TWAIN device.

Quote taken from the Ubuntu forum: Good news for those owning MP370 (canon smartbase) : when plugged into lucid it looks for a driver, doesn't find it but asks to choose one. If you select Canon => BJC -8200 => recommended ... The printer and the scanner work directly! Isn't that cool? Unquote. You don't say which Ubuntu distro you are using, but I should imagine it is best to upgrade to the latest disto (Ubuntu 12.04), as device drivers are frequently added to each new distro release.
