Whenever I create a new layer on Photoshop, it's always created above the active layer.
Is it possible to change that behavior and make it so that whenever I create a new layer it's created below the active layer instead?
My objective with this is so that whenever I import an image it goes below the previous one and not above.
There isn't default keyboard shortcut to link layers but you can assign shortcut from Edit > Keyboard Shortcuts.
Flattening layers just merges all layers down into one. It reduces file size, but once the image is saved and Photoshop is closed, you will no longer be able to undo the change and edit those layers separately.
Try checking the order of your layers.

By default text is vector object and always on Type layer which you can recognize from letter T on thumbnail in Layers panel.

double click on it on layers pallete where are letters Background image and accept,this will convert background layer which is not editable by default to normal layer and then you can edit it
If you're talking about changing different fonts in multiple layers to one font at the same time, the easiest way is to do an individual select of all the text layers together, then change the font. The font change will apply to all the selected text layers simultaneously.

There aren't any disadvantages to use multiple layers. Multiple Layer Design is the point of using Photoshop. You can change elements of a project one piece at a time rather than single layer apps that once you make a enough changes you can never go back. In Photoshop, you can create everything in a Non-Destructive manner and Multiple Layers is a foundational feature for that.
